CHEESE & WINE MAKING INCENTIVES

Cheeses are made all year round while wine follows the seasons - harvesting, pruning , planting & training. Groups of 7 to 120.

MAKE WINE: During harvest, leave Cape Town at day-break and returns around 19h. Get viticulture essentials while getting to the vineyard; there, meet the winemaker, follow him to pick, prune, plant or train, bottle or blend. If time allows, design your own wine label. During harvest, stamp the grapes, de-stem by hand, hand-press, assist in the making of yeast, let the juices sit. Join on the Cheese & Wine Pairing Lunch, rest or swim, then walk the vineyard for clues and a broader grasp of the winemaker's life and tribulations. When not picking grapes, follow the winemaker and absorb vinicultural & blending secrets in the Cellar or engage in blind-folded Cheese & Wine pairing competitions & games.

MAKE CHEESE: Make Pecorino, Ricotta, Munster, Appenzell, Gouda or fresh cream cheeses. Use raw milk or pasteurise, fill vats, mix cultures, seperate curd and whey, mold, hang or float and sit the cheeses... Then indulge in the classic Cheese & Wine Pairing Déjeuner with self-confessed Cheese & Wine addict & host Didier, using his '7 Wonders of the Cape' cheese platter. After Lunch, complete the cheeses & learn home-making, maturation and great age-old recipes.

MAKE CHEESE & WINE Choose one day, two days & overnight combinations to suit your interests. Add nature walks and preparations of Cape Cheese Fondues, Flamekucha or Raclette for supper.
